Benefits of peppers

Along with awesome taste, there are some wonderful health benefits to peppers. Whether sweet or hot, they all have some benefit to them. 

Peppers are part of the nightshade family which also include tomatoes, eggplant, and potatoes. Hot peppers contain capsaicin which can improve heart health, prevent diabetes, and prevent cancer. Sweet peppers contain vitamin A, vitamin C, and potassium. They also contain fiber, folate, and iron.

Here is an easy recipe to try:
Ingredients: 
3 bell peppers
1 lb. ground turkey, chicken, or meatless crumbles from Morningstar)
1 pkg. low sodium taco seasoning
1/2 jar organic salsa
6 slices of pepper-jack cheese or 1 cup shredded
Olive oil to drizzle
Salt and pepper to taste

Directions:Cut tops off bell peppers and slice in half removing seeds. Drizzle bell peppers halves with olive oil on all sides and sprinkle with salt and pepper. (I added garlic powder and Tajin to the peppers) Place on a baking sheet and roast in the oven on low broil until the outsides are browned and remove from oven. It’s usually about 10 minutes. Cook your meat or meat substitute in a skillet until cooked through. Add in taco seasoning and mix well. Next, add in your salsa and cook till bubbly. Spoon the meat or meat substitute mixture into the bell pepper halves and top with pepper-jack cheese. Put into the oven and cook until cheese is melty (note: you can add onion into the meat mixture or mushrooms, you can also top with fresh avocado slices and cilantro)
